Sweet, delicious and a great source of protein. These cookie dough squares will always go down a treat!
Great for packed lunches or 4o’clock munchies but also delicious crumbled over vegan ice cream or coconut yoghurt.
- 150g brazil nuts
- 100g good quality oats
- 3 tbs maple syrup or agave syrup
- 3 tbsp coconut oil
- 1 tsp vanilla bean paste, or 1 tsp good vanilla extract
- 1tsp sea salt
- 100 g dark chocolate (80% cocoa + is best)
ADD brazils and oats to a food processor and blend until flour.
NEXT add the coconut oil, maple syrup and vanilla and salt and pulse until ball is formed.
STIR in the chopped chocolate bits.
PRESS the mixture into a baking tray (lined with greaseproof paper) and refrigerate for a few hours.
FINALLY slice into squares and enjoy.
