Crusty on the outside and creamy on the inside. This baked feta is delicious and a wonderful show stopped to end any dinner party!
I find it is much lighter, creamier and tastier than the animal milk version and of course this version of feta contains; no hormones, antibiotics or cholesterol…just healthy unsaturated nut fats which help protect you against heart disease!
Almonds are also a great source of protein and magnesium.
What you need:
Cheese cloth (get from amazon)
Glass bowl ( that the sieve can sit in)
- 2 cups of raw, blanched almonds (soaked overnight, rinsed and drained OR boiled for 10 mins if in a rush)
- ¼ cup fresh lemon juice
- ¾ cup water
- ¼ cup Extra virgin olive oil
- 2 garlic cloves
- 1 ½ tsp sea salt
PLACE all ingredients in blender and process until smooth adding a tiny bit more water if needed.
PUT the Sieve over the glass bowel. Line your sieve with cheesecloth and pour liquid into cheese cloth wrap it up and place in fridge for at least 12 hours to firm.
ONCE set per heat over to 180C.
UNWRAP the cheese and place it on an oiled (or baking paper lined) pan and bake for 40 mins until golden.
N.B. Keep in airtight container in fridge for 1 – 2 weeks
