These aren’t really vegan meat balls but more like a hybrid of a meat ball and scotch egg.

I made them by chance one day.

I had left over vegan sausage meat and decided to use it up in a creative way –  and it was DELICIOUS!

So here is the recipe so you can all enjoy them too ….

 

 

Ingredients:

1 Vegan egg

A block of Vegan mozzarella

5 tbs Breadcrumbs

Sausage meat (see recipe for sausage rolls OR  buy vegan sausage mix in a bag I sometimes use, ‘suma, plant based sausage meat’ from amazon)

 

 

Method:

  1. Cut vegan mozzarella into small squares (thumb nail size)
  2. Take the sausage meat and wrap it round the vegan mozzarella cube to create a ball.
  3. Dip the ball first in vegan egg. Then in breadcrumbs.
  4. Bake at 200 for 20-30 mins (if mozzarella starts bubbling out stop coking them)
  5. ENJOY

N.B. Great served with tomato spaghetti or courgetti as shown in the picture above.
