Ingredients:

Sauce:

100g cashews soaked overnight (or boiled for 5 mins if in a rush)

200ml Water

40g sun dried tomatoes

Squeeze of lemon

Pinch of salt

2 garlic cloveså

Extra ingredients:

Whole grain/lentil or chickpea pasta

Large bag of spinach

50g chopped sun dried tomatoes

50g pine nuts (toasted if desired)

Basil

EVOO

Salt pepper

 

 

  1. Blend all sauce ingredients in Nutribullet and set aside
  2. Make the pasta according to directions on packet
  3. When pasta almost done add spinach and bring back to the boil
  4. Drain pasta and spinach, leaving a small amount of pasta water in pan and place back on low heat
  5. Add in sauce, chopped toms, basil, salt and pepper and stir until warm through
  6. Add a splash of olive oil, pine nuts and basil
  7. Serve immediately.

 

NB sauce will thicken as it cool so make it a little runny
